Noma Taiwan — Note

Noma is a fine-dining restaurant from Denmark known for its long-term commitment to exploring different cultures and ingredients around the world. Over the years, they have created pop-ups in places such as Kyoto and Latin America. This year, they planned a 13-month exploratory journey that includes a three-week pop-up in Yangmingshan, Taiwan.

This led me to imagine: What if Noma were to base a restaurant in Taiwan?
What kind of atmosphere, identity, and aesthetic would truly represent it?

Inspired by Taiwan’s vibrant food culture and its exceptional ingredients, I believe that the diversity of dining here—from fine dining to everyday street food—is itself a strong reflection of Taiwan’s culinary spirit and local flavors.

For this personal project, I plan to envision a Noma concept located in Eastern Taiwan, using this as a lens to explore what the “Taiwan vibe” could be. I will extend this exploration into a series of creative products. This is not an exact campaign, but rather an aesthetic and cultural research project for Taiwan.
